You will need 4 5 to 6-ounce lobster tails that are raw, deveined and shelled, 4 sticks of butter, “Beurre Monte” and 2 tablespoons of water. “Beurre Monte” is a technique where butter is kept in an emulsified way by melting it between 180 degrees and 190 degrees Celsius and is used for poaching vegetables and meat.
In a large saucepan with a heavy bottom big enough to fit the fish tails, pour 2 tablespoons of water to simmer and whisk your butter one stick at a time, ensure you reduce the heat being very careful not to boil the butter.
When you are ready to poach your lobster tails, bring the “Beurre Monte” you prepared up to heat up thoroughly to 160 degrees Celsius for about 5 to 6 minutes turn every minute, you can use the Thermapen Thermometer to take the temperature.
The amount of time you need to poach the lobster tails depends on how large they are. Be extra careful not to overcook them, now you don’t them all rubbery do you? They should be so soft one may think they are not even cooked.

You will need: 8 jumbo lobster tails at least 8 to 10 ounces each, kosher salt, and canola oil, lemon zest and cilantro leaves to garnish.
You can also make this butter (lemon-red Fresno) serve it with the dish you will need: freshly squeezed lemons, clover honey 1 teaspoon, 2 sticks of unsalted butter, black pepper, kosher salt, grated lemon zest 2 teaspoons and Fresno chilies.
The first step is to prepare the butter, you have to do it earlier then keep it covered and refrigerated for a week.
Prepare the grilled lobster tails by placing a saucepan of water on medium heat, in the water add in the lobster tails and let them boil for four minutes, then use a sharp knife to cut open the lobster tails on their underside lengthwise, while you do this be careful not to crack the back shell with the knife this is to leave the lobster tail intact but exposing the exposed inside part.
Prepare a charcoal grill to medium heat and place the tails with the flesh on the downside, grill for about 3 minutes until charred flip them over and generously apply the Fresno butter you prepared then continue grilling for about 3 minutes more till they are ready. After you remove the lobster tails you just grilled, top them up with some more butter, lemon zest, and cilantro leaves. You can also perform this recipe with basil butter if you like; it is equally rich in flavor.
